Plan Bee Madeleines

Ingredients
4 oz unsalted butter, plus 3 tablespoons reserved
2/3 cup white sugar
1 cup flour, plus 1 tablespoon reserved
Pinch of salt
2 large eggs
1 teaspoon vanilla
1 tablespoon fresh lemon juice
1 tablespoon fresh lemon zest
Powdered sugar or melted semi-sweet chocolate (optional topping)
Instructions
Melt the butter until slightly toasty brown. Remove from heat or pour it into a new container. Reserve 3 tablespoons of butter in a small bowl.
Whisk together one cup of the flour and the sugar. In another bowl, whisk the two eggs with the vanilla, salt, lemon juice, and lemon zest until frothy.
Combine the dry and wet ingredients with the melted butter but do not over mix.
Cover and rest the batter in the refrigerator at least an hour but no longer than overnight.
Use a pastry brush to coat the shells with the butter-flour mixture. Place the pans in the freezer for at least an hour.
Preheat the oven to 350°F and fill each shell in the pan with 1 tablespoon of the batter.
Bake the madeleines for 12 to 13 minutes. The madeleines should be browning around the edges and puffy in the middle. Use a finger to press lightly on the center hump of the cake, it should spring back at your touch.
Cool for 2 minutes and the gently loosen the madeleines from their molds. Upend the whole pan onto a tea towel to finish cooling. Once cool, dust lightly with powdered sugar or dip in melted chocolate for an added treat.

Dear Child,
Do remember to use the succulent center of the vanilla pod to better enhance the flavor of the delicate Madeleine. It is always best to use the fresh juice of the lemon and its zest, but truly the vanilla pod is second to none. It reminds me of that passage in Remembrance of Things Past by Marcel Proust. There he speaks of the Madeleine being a conduit of remembrance of a time in his childhood. Such magic. Do let it transport you to a better time and place.
